Grandmother Knight’s Blueberry Bread Pudding Recipe

8 Slices of buttered raisin bread cut into cubes.

Place in oblong pan or baking dish.

In a large bowl mix the following:

4 Cups of Milk

2/3 Cups of Sugar

1 Teaspoon of Pure Vanilla Flavoring

1 Cup of fresh Blueberries

2 Eggs

Mix well then, pour over the bread

Sprinkle Cinnamon over the top, and then add a few Blueberries

Bake for 30 minutes @ 350 degrees

Sometimes, she baked her Cinnamon Bread before she made the bread pudding. To our joy she served her grandchildren with vanilla ice-cream on top of the Blueberry pudding on the shaded back porch.

My cousins and I would eat silently as we watched the Spanish moss sway in the sweet southern breeze. It didn’t get any better than being with our Grandmother Knight on the farm during our summer vacation.

I am not that wonderful, nor am I a grandmother. Everything she served her family was divine and no one else could come close to her cooking or baking.

I am happy she taught me some of her favor recipes. I felt honored because there was no one like my grandmother.

Two Egg Cake (1937)

I am forever finding old binders with written recipes of my mother's and here is one I will share with anyone who loves to bake.

My mother lived on a farm so she had butter, milk, cream, eggs, honey from the bees so she did not need to shop for much. She and her girlfriends loved to bake together.

Back in 1937 neighbors traded their flour, meal and other food items with grandfather for his smoked pork and beef. Country life decorated the farm community of my grandparents and their neighbors with love, respect and kindness. This is how some families made it during the Great Depression my grandfather told us many times.

Just a little ambiance of my mother's young life on the farm.

1/2 cup of butter
1 cup of sugar
2 eggs
1/2 cup of milk
1 5/8 cup of sifted flour
3 teaspoons of baking powder
1/2 teaspoon of salt
1 teaspoon of vanilla

In a large bowl cream butter while gradually adding sugar continue to stir until light and fluffy. Add eggs and beat well. Sift flour once and then measure, add baking powder and salt and sift together three times. Add flour then a small amount of milk to the cream mixture. Then beat after each addition until smooth. When all the flour and milk are added and beaten; then add vanilla, beat well.

Bake in two 9 inch layer pans in moderate oven (375 degrees) for 25 minutes or until done. Cool and then spread with Glorified Frosting.

Glorified Frosting

2 egg whites unbeaten
1 1/2 cups of sugar
or you may use 2 cups of brown sugar
1/8 teaspoon salt
5 tablespoons of water
1 1/2 teaspoon of cornsyrup
1 teaspoon of vanilla

Cook all ingredients together except vanilla in the upper part of a double boiler. Beat constantly until it holds peaks. Blend in the vanilla. This make enough frosting to cover the 9 inch layers or top and sides of 8 x 8 x 2 inch cake.
